Summer Recipes for Every Cookout

Summer is fully here, heat and all, so why not embrace it? It’s the perfect time to try out new recipes, grill out, and use fresh ingredients. We’ve collected a few recipes you can try for yourself, so scroll down and check them out!

Carne Asada Street Tacos

  • 2 Tbsp vegetable oil
  • 3 lbs flank steak
  • 1 onion chopped
  • 2 fresh limes
  • 1 bundle of cilantro
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 stick butter
  • 16 mini corn tortillas

Thinly slice steak and then chop into bite size pieces. Brown the steak in a skillet in the oil. Add half the onions to steak in skillet and cook until soft. Season meat and onions with salt and pepper. Squeeze the juice of two fresh limes over the meat and onion mixture. Continue cooking until meat is thoroughly cooked. While the steak is cooking, heat the butter in a separate skillet. Fry the mini corn tortillas in skillet for 1 minute until they are soft. Allow them to cool slightly. Use 2 corn tortillas for each taco. Spoon the meat mixture into two tortillas and top with cilantro, fresh onions, or other toppings.

Tortellini Salad with Cherry Tomatoes, Arugula, and Pine Nuts

  • 6 Tbsp olive oil
  • 3 Tbsp fresh lemon juice
  • 1/2 cup shredded fresh basil
  • 1 shallot, minced
  • 1 tsp garlic, minced
  • Salt and pepper to taste
  • 2 (9 oz) packages cheese tortellini
  • 1 pint cherry tomatoes, halved
  • 1 1/2 oz baby arugula (2 cups)
  • 1/2 cup grated parmesan cheese
  • 1/4 cup pine nuts, toasted

Bring 4 quarts water to boil. In large bowl, whisk olive oil, lemon juice, basil, shallot, garlic, salt, and pepper together. Add tortellini to water and 1 Tbsp salt. Cook until tender then drain. Add tortellini and cherry tomatoes to bowl with dressing and toss. Cover and refrigerate until cool. Just before serving, add arugula, parmesan, and pine nuts.

Apple Dew Cobbler

  • 2 Granny Smith apples (peel and cut into 8 sections each)
  • 2 cans crescent rolls
  • 1 cup real butter
  • 1 1/2 cup sugar
  • 1 1/2 cup Mountain Dew soda (not diet)

Wrap each 1/8 apple section in crescent roll dough. Place in lightly greased baking dish. Melt butter and mix with sugar, spread over apples. Pour Mountain Dew over apples. Do not stir! Sprinkle with cinnamon and chopped nuts. Bake uncovered at 350 degrees F for approximately 45 minutes. Delicious when served with vanilla ice cream.

Fresh Watermelon Lemonade

  • 1/2 medium-size watermelon, or enough to make 4 cups watermelon juice
  • 4-5 large lemons, or enough to make 1 cup lemon juice
  • 1 – 1 ½ cups granulated sugar
  • 4-6 cups water or sparkling water
  • fresh mint

Refreshing Blueberry Salsa

  • 2 cups fresh blueberries
  • 1 red bell pepper diced
  • 2 jalapeno peppers seeded and membranes removed, finely diced
  • 1/2 red onion diced
  • 1/3 cup fresh cilantro chopped
  • 1/2 tsp sea salt
  • Juice of 1 lime
